Frequently asked questions

Why is salt not a one to one swap by volume?

Because crystal size and density differ. A level teaspoon of fine table salt weighs about 6 grams, while the same teaspoon of flaky Diamond Crystal kosher salt is only about 2.8 grams. Swapping by volume can leave a dish far too salty or flat.

What densities does this calculator use?

It uses common kitchen approximations per level teaspoon: table salt 6 g, Morton kosher 4.8 g, Diamond Crystal kosher 2.8 g, and fine sea salt 5.5 g. These are typical reference values, though brands and packing vary slightly.

How does the conversion keep the saltiness the same?

It converts your teaspoons to grams using the source salt density, then divides by the target salt density to get teaspoons. Holding the weight of salt constant keeps the seasoning level the same between salt types.

Why does so much kosher salt replace table salt?

Flaky kosher salt is much less dense, so it takes more volume to reach the same weight. Replacing 1 teaspoon of table salt needs roughly 2 teaspoons of Diamond Crystal kosher salt to match the saltiness.

Should I just weigh salt instead?
