What is the difference between 1:1 and 2:1 simple syrup?

A 1:1 syrup uses equal sugar and water and is light and pourable. A 2:1 rich syrup uses twice the sugar, so it is thicker, sweeter and lasts longer in the fridge. Rich syrup lets you add less liquid to a drink.

Should I measure by volume or by weight?

Bartenders usually measure by volume, which this calculator uses. Weight is slightly more precise because dissolved sugar is not perfectly additive, but the volume split is close enough for cocktails and coffee.

How long does simple syrup last?

A 1:1 syrup keeps about two to four weeks refrigerated, while a 2:1 rich syrup keeps roughly a month or more because the higher sugar content resists spoilage. Store it sealed and discard it if it turns cloudy.

Do I need to heat the water to make simple syrup?

Heating speeds up dissolving but is optional for 1:1. Warm water and a quick stir works, or you can shake cold water and sugar in a sealed jar. A 2:1 syrup dissolves faster with gentle heat.
